We all know why the wasabi is there but have you ever wondered why there’s a small stack of sliced pickled ginger right beside it? The pickled ginger or “Gari Shoga” is there to cleanse the palate when transitioning from one piece of sushi to the next. Sweet pickled ginger works by resetting the taste buds to prevent them from becoming overwhelmed or desensitized to the taste of the item.
