Fresh, Infused Lemonades in our Cafe

We live in California, and with the beautiful weather we have here, we have no excuse to wait for the first day of summer to enjoy refreshing and satisfying lemonade! Nothing quenches my thirst on a warm day quite as well as an icy glass of fresh squeezed lemonade. I honestly cannot think of a beverage I enjoy more, and with the 80° weather we’ve been having, the timing is just right. In our cafes*, we are offering some wonderful and unique fresh batch lemonades including: Strawberry, Watermelon Rosemary, Peach Ginger, and Cucumber Mint! They are all fresh and delicious. I would love to share the recipe for our Cucumber Mint Lemonade with you to make at home. This makes a good size batch that will keep everyone in the home hydrated and happy this summer grilling season.
Cucumber Mint Lemonade
6 cucumbers, chopped
4 1/2 cups sugar
4 cups of mint leaves (no stems)
10 cups of water
9 cups fresh squeezed lemon juice
Heat ¾ cups of water with the sugar until it is clear. Cool this mixture in the freezer for 15 minutes.
Peel and chop cucumbers. Add cucumber, lemon juice, mint leaves, and sugar syrup in the blender until smooth. Add ice and remaining water.
Slice the lemon and float on top of your pitchers. Enjoy!
