Hatch Chiles & Cheesy Dishes

You’ve probably noticed that we are huge Hatch chile fans around here. We can’t get enough of the spicy southwestern chile, and the hotter the better. Over the years and through many recipes, we’ve found some of the best complimentary flavors to go along with the spice and smoky quality of roasted Hatch chiles. Cheese and other creamy dairy products are some of the best ingredients to incorporate with chiles as they tame the heat levels to an enjoyable level. Below are some of our best-loved items by our team and customers alike.
Hatch Chile Con Queso Dip
We are kind of famous for our year-round regular Chile Con Queso Dip, and in celebration of Hatch chile season, we have added a twist to our con queso dip by including roasted Hatch peppers into the recipe. It gives it that New Mexican cuisine flare. Tex-Mex indeed!
Lactose intolerant folks, be afraid, be very afraid! This cheesy appetizer is totally addicting and perfect for picnics, potlucks, holiday celebrations, or just for snacking. It is a great dip for crackers or tortilla chips, or as a spread on French bread and toast. Instead of sour cream, enjoy on your fresh baked potato. A dollop of our Hatch Chile Con Queso will liven any dish up. Yum, yum!!

Hatch Chile Cream Cheese
Plain cream cheese is good and safe, but sometimes you need something a little different. A fruit flavored or savory herb cream cheese is a great alternative, but how about something with spice and a little heat? Hatch Chile Cream Cheese!
We have taken our silky smooth cream cheese and added authentic roasted Hatch chile peppers from New Mexico, Italian parsley, and a wee bit of habanero pepper. It is cool and spicy all at once.
Our Hatch chile cream cheese is the perfect sidekick to a morning bagel, or is great whipped into your mashed potatoes. Just add a few heaping tablespoons in as you mix.
Hatch Chile Mac & Cheese
Warm and gooey macaroni & cheese is arguably the comfort of all comfort foods. It is rich and creamy, and great as a side dish or as a main entrée. Yummy!! It’s always been great on its own but is very forgiving with the addition of new ingredients, such as shredded rotisserie chicken, bacon, or lobster. We dared to kick our macaroni & cheese up a notch with the addition of roasted Hatch chiles!
Our traditional macaroni & cheese recipe is made with whole milk, cream, and a four cheese blend of cheddar, mozzarella, jack, and fontina cheese. Along with herbs and spice, we add the New Mexico favorite roasted Hatch green chiles. It’s not too mild, yet not too spicy. The chiles give our macaroni & cheese enough flavor and heat with a lovely smokiness to excite your palate.
