5 Spoke Creamery Redmond Cheddar

5 Spoke Creamery is located 57 miles north of New York City. All of their cheeses are hand made with raw milk in the farmstead tradition, meaning the cheese is produced on sight with the milk of a closed heard. This milk comes from Holstein cows that are free of pesticides and hormones. The cows are milked at 4:00 am and they make the cheese at 9:00 am all in a facility that is 100% solar.
Their herd of Holstein cows are pastured and free to roam, picking and choosing what they eat from a variety of grasses, herbs, flowers and weeds. The raw milk of these grass-fed cows has a depth of flavor which cannot be duplicated. 5 Spoke Creamery’s cheeses are creamier and more flavorful than those made from pasteurized milk. This also offers numerous health benefits that are inherent to raw milk. Raw milk cheeses have all the good bacteria found naturally in milk and none of the bad. State laws require a minimum of 60 days for aging which eliminated pathogenic bacteria so the cheese is safe. Over 70% of European cheeses are made from raw milk.
Other attributes of consuming raw milk cheese:
Better digestion, stronger immune system, fights allergies, cancer protection, better calcium absorption and cheese made from raw milk are one of the few foods that contain the perfect balance of Omega-3 and Omega-6 fats.
The Redmond Cheddar is reminiscent of traditional English Cheddar. The cheddar is mild and creamy with a smooth texture. This pairs well with apples, pears, Pinot Noir and Boulevard Brewing Company Cranberry Orange Radler.
We will be demoing the Redmond Cheddar in our stores January 25th – 31st .
