Summertime Grilled Peach Pizza Recipe

Mmmm….pizza. It’s delicious no matter the variation. No cheese, extra cheese, thin crust, Chicago deep dish, extra veggies, sans veggies…we love it all. But what we really love is pizza cooked on the grill. There’s just something special about that grilled, crunchy crust covered in melty cheese and of course, all the delicious toppings.
Since it’s officially summer peach season and as far as we’re concerned, peaches are the more the merrier in the kitchen right now, we’ve created an ode to the peach in pizza pie form. It’s covered in mozzarella, Gorgonzola, grilled sliced peaches, arugula, red onions, and a balsamic glaze. It’s heavenly to say the least.
Grilled Peach Pizza
One batch pizza dough
1/2 cup marinara
1 1/2 cups shredded Mozzarella or Italian blend
2-3 large peaches, sliced but not peeled
2 cups packed arugula
1/3 cup Gorgonzola
1/3 cup thinly sliced red onion
1/2 cup Olive oil, divided
Prep your grill by cleaning and greasing with Olive oil. Then, preheat the grill to high heat.
Roll out your dough on a flour-dusted surface. Use your fingers to gently stretch the dough or hold it up and let its own weight stretch it out a little. Be sure to get all air/bubbles out of dough and form in 12-inch (give or take) circular shape. Place on a pizza peel or large cookie sheet. Once grill is hot, carefully slide the dough from the peel or pan onto grill rack.
Close the grill lid and cook for 2-3 minutes.
Check the bottom of the dough w/ a spatula and if it’s lightly brown with grill marks, carefully place it back on the peel or pan and flip over with spatula, then return to grill to cook the other side for 2-3 minutes. If it hasn’t quite browned, rotate 90 degrees and close the grill lid for another minute.
Once pizza is grilled on both sides, remove from heat. Now, brush your grill with olive oil and place the peach slices on the rack for 2 minutes on each side. Remove from heat. Reduce grill heat to low.
To your pizza, add the sauce, cheese, and sliced onions. Return to grill and close lid for 2-3 minutes until cheese has melted. Remove from grill and add the grilled peaches and arugula.
