Wine Thursday: Koyle Gran Reserva Cabernet Sauvignon
Koyle Gran Reserva Cabernet Sauvignon: Deeply colored, with plenty of black fruit character. It shows a great presence of currant and blueberry, with hints of exotic spice and cedar. This Cabernet is a full expression of origin, showing a real grip of acidity and mineral notes. Ripe tannins are solid and velvety, and come together beautifully, with a silky and balanced finish.
The grapes come from Koyle’s Los Lingues Estate. After being picked and selected, the vineyards are biodynamically managed, with stringent water management that preserves the expression of the terroir. Then, the grapes are handpicked and then brought to the cellar for sorting, selecting only perfect clusters for this wine.
In the tank, cold maceration (for aroma and flavor extraction) takes place over 5 days, followed by fermentation over two weeks. Finally, warm maceration to extract just the most rounded and silky tannins takes place. Then, the wine ages in French oak barrels. After twelve months of aging, a final blending allows for the perfect expression of balance and elegance.
