Wine Thursday: Koyle Gran Reserva Cabernet Sauvignon

Deeply colored, with plenty of black fruit character, showing a great presence of currant and blueberry, with hints of exotic spice and cedar. This Cabernet is a full expression of origin, showing a real grip of acidity and mineral notes. Ripe tannins are solid and velvety, and come together beautifully, with a silky and balanced finish.

The grapes were picked in selected lots, coming from Koyle’s Los Lingues Estate. The vineyards are biodynamically managed, with stringent water management to preserve the expression of the terroir. The grapes are handpicked and brought to the cellar for sorting, selecting only perfect clusters for this wine. In the tank, cold maceration (for aroma and flavor extraction) takes place over 5 days, followed by fermentation over two weeks. Finally, warm maceration to extract just the most rounded and silky tannins takes place. The wine is then aged in French oak barrels for twelve months, with a final blending that allows for the perfect expression of balance and elegance.
