Your taste buds will be saying, "Aye Aye, Captain!" Your meal will include two pieces of beer battered white cod fillets, cole slaw, tartar sauce, fresh lemon wedge, and French fries all for $8.99. Yes, I know it is a bit early but we live in California! How can you go wrong? People will be working in their gardens, this weekend, enjoying the perfect weather and capping off with something refreshing to drink....don't you think? Bristol Farms offers seasonal, unique recipes for a variety of lemonades and today I would love to share our recipe for the Mint Cucumber Lemonade. This makes a good size batch that will keep everyone at home refreshed, hydrated, and happy. Enjoy!
Mint Cucumber Lemonade
4.5 cups sugar
9 cups of lemon juice
4 cups of mint leaves (no stems)
10 cups of water
Heat ¾ cups of water with the sugar until it is clear. Cool this mixture in the freezer for 15 minutes.
Peel and chop the cucumbers. Add cucumber, lemon juice, mint leaves, and chilled sugar syrup in the blender and blend until smooth. Pour the blended mixture into a pitcher and add ice and remaining water.
