Cheese of the Month – Omorro Azores

We’re excited to introduce you to our latest delicious cheese find from the Faial Island in Portugal. Omorro Azores, also known as Omorro Amanteigado, is torta-style cheese (served as a centerpiece for sharing) made from cow’s milk, which differentiates it from the sheep and goat's milk varieties found on the mainland. Like many Portuguese cheeses, it is made using vegetarian rennet, which gives the cheese pronounced vegetal notes. It is very creamy, buttery, and unctuous with a slight tang. This type of cheese is traditionally displayed by slicing and removing the whole top rind allowing guests to enjoy its creamy, gooey paste spread onto fresh bread. Simply divine! The cheese-maker, Rui Caldeira, is aided by his fiancée, Ana Marisa; his brother, Nuno; and his wife, Maria, at their dairy located near the natural reserve of Morro del Castelo Branco. Beemster Hatch Pepper Cheese

Calling all Hatch Chile-Heads! It's time to add another check mark to your Hatch cheese discovery list. We first introduced you to our Hatch Pepper Cheddar, and now we're proud to offer its spicy, sweet sister from the Netherlands, Beemster Hatch Pepper Cheese. Beemster Hatch Pepper Cheese is a spicy yet deliciously creamy Gouda cheese that gets its peppery kick from hatch chiles which vary in heat from subtle to fiery hot. Don’t be scared, though; this sweet and creamy cheese takes you close to the fire without getting burned. Hatch Chile season is here! Each year, we celebrate this delicious pepper through live roasts, delicious recipes, and pure excitement from our team members and customers alike. Cheese of the Month – Beecher's 4‑Year Aged Flagship Cheese

The first wheel of Flagship, Beecher’s signature cheese and our cheese of the month for July, was handcrafted just as Beecher’s Handmade Cheese opened its doors in Seattle’s historic Pike Place Market in November of 2003. Now, Flagship proves it’s age-worthy in this four-year version. Richer and nuttier than its younger counterpart, with a tangy finish. Made with a mix of Holstein and Jersey cow’s milk (60 percent and 40 percent, respectively) and studded with tyrosine crystals, this crowd-pleasing cheese is now more available than ever. 5 Spoke Creamery Cheese

Great cheese starts with great milk. At 5 Spoke Creamery, all of their cheeses are handmade in the farmstead tradition (produced on site with a closed herd) from the raw milk of grass-fed cows. The milk comes from Holstein cows that are free of pesticides and hormones. They milk the cows at 4:00 am and make the cheese at 9:00 am. Incredibly fresh milk is always the base of this delicious cheese. Grass-fed cows are allowed to roam, consuming a diet of a variety of grasses, herbs, flowers, and weeds. Cheese of the Month – Bent River Cheese

Bent River is Alamer Cheese Co.’s flagship cheese, made in the style of Camembert.  Named after the sharp turn of the Minnesota just a few hundred yards from their production site, it is released at five weeks. Over the next six weeks or so, the cheese will ripen to full maturity. During that time, the texture and flavor profile will change (and better with age), but at all stages you’ll have a Camembert that will rival the best around. Initially, there will be a layered “button” of unripened cheese in the center. As the cheese ages, the button will ripen and you’ll have a smooth paste throughout. The ideal time to eat depends on your preference: as the weeks go by, the flavor profile will change with a mushroom-like aroma and taste leading the way. We have serious LOVE for an ooey gooey grilled cheese sandwich, and we couldn't be any more happy when we heard that the beloved grilled cheese is being celebrated all-month-long in April for  National Grilled Cheese Month! An entire month devoted to reflecting on the wonder that is two slices of buttered bread with cheese grilled to melted perfection. This may be the best idea ever.
