Hatch Chile Poke, Fiesta Roll, & Crab Cakes!

It’s Hatch Chile time, and we’ve been roasting them fresh every day.  While their popularity mainly exists with a variety of Hispanic deli and bakery dishes, we’ve found other ways of presenting its unique flavor into other ethnic foods.  Sushi and it’s “Westernization” has developed into much more than its fish and rice origins with many fusion type restaurants blending sushi with other ethnic flavors.  Our sushi masters created a new fusion sushi with our own Fiesta Roll, and during Hatch chile season, we add fresh roasted Hatch chiles to make our Poke and Fiesta Roll better than ever. While the image of caviar and champagne conjures visions of black ties, white linens, and the finest crystal, it needn’t be so. Admittedly, it is a bit decadent, and luxurious, but not necessarily price prohibitive. Caviar, whether it be the highly prized Golden Osetra, or the California White Sturgeon “Royal Reserve”, is something that everybody should incorporate in at least one culinary experience. Yes it is salty as it is fish roe that is salted for preservation, but it is widely touted as a healthy indulgence that does more than just your taste-buds good. It is packed with Vitamins A, B6 and B12, E as well as Iron, Magnesium, Selenium, and a few other essentials. Today’s sushi comes in many styles and flavors.   What one may have seen in the past, probably took on a few changes as it continues to evolve here on the West coast.   Sushi Chefs all over the world are fusing their own ethnic flavors with sushi and creating a whole new eating experience.   Yes, sushi is changing but we must not forget where we started from and at the very least, know the kind of sushi they are not just by the novelty names we gave to them. So here’s a little sushi guide to help us remember. Nigiri Sushi: Nigiri - a small ball of sushi rice formed by hand with a topping into a rectangular shape. Usually one order contains two pieces of Nigiri sushi. Mastering how much pressure to use to form the Nigiri is the key. Gunkanmaki - created for those toppings that just won’t stay on top. Bristol’s Own All Natural Sushi Ginger

We all know why the wasabi is there but have you ever wondered why there’s a small stack of sliced pickled ginger right beside it?  The pickled ginger or “Gari Shoga” is there to cleanse the palate when transitioning from one piece of sushi to the next.  Sweet pickled ginger works by resetting the taste buds to prevent them from becoming overwhelmed or desensitized to the taste of the item.  Eating several bites of the same food results in the taste becoming monotonous or less impressive and eating ginger prevents that from happening.  Some say the ginger squelches the nasally burn brought on from using an excessive amount of wasabi.  What about ginger root benefits?  Ginger naturally aids in digestion and in some cases, ginger can help ease nausea, motion sickness, and morning sickness during pregnancy.   A few years back, we thought we should have our ginger made with real ingredients and no artificial flavors or preservatives so we asked a local pickling company… Read More

Power of the Peach Roll!

It’s summer, temperatures are rising so what better way to cool yourself down than with an ice cold beverage and fresh sushi roll made with fresh peaches.  Really, peaches with sushi?  Remarkably, peaches and other soft fruit go very well with sushi when combined with quality ingredients.   We start with a sheet of nori (dried seaweed) and cover it with our own special sushi rice that was blended with our very own vinegar. Next, we lay fresh cooked shrimp tempura on top of a couple of avocado slices and cucumber. Lastly, we cover the roll with fresh peach salsa. The end result is a sushi roll that is complete in all sushi flavors: sweet with a little spice, crispy, and creamy.
