Tasty Grilled Shrimp With Sweet Pineapple & Juicy Melon Salsa

Serves 4 | 

Sweet and fruity is an easy way to describe this dish. The addition of grilled shrimp makes it a meal unlike any other.

Ingredients:

1 cup pineapple, (finely diced)
1/4 cup red bell pepper, (finely diced)
1 pound shrimp, (raw, peeled and deveined)
2 teaspoons jalapeño, (minced, seeded)
1/4 cup green bell pepper, (finely diced)
1/4 cup red onion, (finely diced)
2 cups melon, (finely diced)
2 tablespoons canola oil
4 lettuce leaves
2 teaspoons ginger, (finely grated)
2 tablespoons mint, (finely chopped)
4 lime wedges
3 tablespoons rice vinegar
1/2 teaspoon kosher salt

Directions:

  1. In a medium bowl, combine 1 teaspoon jalapeño, shrimp, 1 teaspoon oil and 1 teaspoon ginger. Cover and place in refrigerator between 4-24 hours.
  2. In a large bowl, mix together red and green bell pepper, melon, mint, onion, pineapple, salt, vinegar along with remaining jalapeño, oil and ginger. Refrigerate up to 4 hours.
  3. Preheat grill to high.
  4. Pierce the top and bottom of the shrimp with skewers. Cook 2-3 minutes per side.
  5. Arrange lettuce one per plate, scoop on salsa then garnish with shrimp.
