London Broil Summer Salad
Ingredients
1 lb London Broil
2 tablespoons Extra Virgin Olive Oil
2 tablespoons Scott's Santa Maria seasoning
1 each Romaine Lettuce torn into bite-sized pieces
6 ounces Oven roasted tomatoes in our Cheese Dept
1/2 cup Red onion, thinly sliced
8 ounces Ciliegine mozzarella
1/4 cup Extra Virgin Olive Oil
1/4 cup Balsamic vinegar
1 each Lemon, cut into 6 wedges
Method
1. Combine olive oil and Santa Maria seasoning to make a paste. Rub on London Broil and marinate overnight.
2. Cook London Broil on a preheated grill for approximately 8 minutes per side or until internal temperature reaches
130 degrees. Let rest for 10 minutes, slice thinly across the grain, about 1/4 inch thick.
3. Arrange romaine lettuce on 2 plates, top with tomatoes, onions and mozzarella. Sprinkle olive oil and balsamic
vinegar on top.
4. Fan London Broil slices over salad and serve with lemon wedges.
Serves two.
