his week's recipe comes from Achille Dattilo and Dattilo's
Restaurant. This deliciously rich recipe is made with Datillo Crema Rosa Sauce and is wonderful on all sorts of
pastas.
Datillo's Rigatoni Vodka Pasta
Ingredients
1 jar Datillo Crema Rosa Sauce (24.5 oz)
1 lb Rigatoni pasta
3 tablespoons salt
1/4 cup premium vodka
2 tablespoons butter
Method
In a large pot bring 5 quarts of water to a boil, add salt and cook pasta according to package instructions. On low
flame in large skillet add butter, bring to simmer but to not burn. Remove skillet from flame while adding vodka,
then return to flame. Let vodka evaporate and add Datillo Cream Rosa Sauce, bring to a simmer. Drain pasta, pour
into skillet and mix until the pasta is coated. Makes 4 to 5 servings.
