Peach Chutney

Ingredients:
1 tablespoon Olive Oil
2 tablespoons Yellow Onion (minced)
½ tablespoon Garlic (minced)
1 tablespoon Fresh Ginger (peel and mince)
2 each Peaches (diced ¼ inch)
2 tablespoons Red Wine Vinegar
2 tablespoons Brown Sugar
½ cup Pineapple or Orange Juice
2 tablespoons Cilantro (minced)
2 tablespoons Green Onion (minced)

Method:
1.Heat olive oil in sauté pan and add onion, garlic and ginger and cook until tender. Add peaches, vinegar, sugar and pineapple juice and bring to boil.
2.Reduce heat to simmer and cook until mixture is syrupy, about 15-20 minutes, stir in cilantro and green onions, keep warm until ready to use or refrigerate and re-heat later.
