Spicy Tangerine Pork Medallions with Mediterranean Couscous

Two Buddies Spicy Tangerine Grilling and Roasting Jam

Garlic Cloves, peeled and minced

Pork Tenderloin from our Award-Winning Meat Department

 

Combine Two Buddies Spicy Tangerine Jam with minced Garlic in a medium bowl and mix well. Place Pork Tenderloin and the marinade in a large plastic ziplock bag, seal, and shake to coat Tenderloin. Place in refrigerator and marinate for 3 hours or overnight. Place Tenderloin on a preheated grill for 15 - 20 minutes per side or until the internal temperature reaches 155 degrees. Let Pork Tenderloin rest for 10 minutes and slice into medallions, about 1/2 inch thick. Pour the marinade to a small sauce pan and bring to a boil.

 

Far East Couscous :

Bristol Quality Italian Squash, diced small

Bristol Quality Holland Red Bell Pepper, diced small

Bristol Quality Red Onion, diced small

Near East Natural Couscous, cooked according to the package's direction

Cumin

Teaspoon

Kosher Salt

Teaspoon

Freshly Ground Black Pepper

 

Shuck corn and place on preheated grill for 5 - 10 minutes or until it is cooked. Strip the kernels off the cob with a sharp knife, set aside. Heat Olive Oil in a saute; pan and saute; Garlic until golden. Add diced Italian Squash, Red Bell Pepper, and Red Onion, saute; for 2 minutes. Add cooked Couscous, Corn Kernels and Cumin, mix well, and season with Kosher Salt and Freshly Ground Black Pepper. Cook until the Couscous is heated through.

Serve Pork Tenderloin Medallions drizzled with Spicy Tangerine Sauce and Mediterranean Couscous on the side.
