Herb Marinated Pork Loin Roast

Ingredients
3 tablespoons Olive Oil
2 tablespoons Garlic, minced
1/4 cup Sweet Onion, minced
2 tablespoons Fresh Rosemary, minced
2 tablespoons Lemon Zest
2 tablespoons Flat Leaf Parsley, minced
1 tablespoons Fresh Oregano, minced
3 1/2 -4 lb Pork Loin Roast
1 tablespoons Kosher Salt
1 tablespoons Fresh Ground Black Pepper

Method
1. In a medium Bowl mix together olive oil, garlic, onion, rosemary, lemon zest, oregano, and parsley.
2. Place pork loin in large ziplock bag or in pyrex dish. Pour marinate over meat, turning meat to coat with marinate. If using pyrex cover with plastic wrap. Place pork loin in refrigerate and let marinate over night to 3 hours minimum.
3. Pre-heat oven to 350 degree.
4. Place wire rack in roasting pan large enough to hold the pork loin. Remove pork loin from marinate place on rack in roasting pan, pour left over marinate over pork loin.
5. Season pork loin with salt and pepper.
6. Place Pork loin in oven and bake for 1-1/2-2 hrs or until a meat thermometer reads 160 degrees. Remove pork loin from oven, cover with foil and let rest 15 minutes before slicing.

Serve with garlic roasted potatoes, couscous, or grilled vegetables. Serves 8.
