Asparagus with Mango Dressing

Serves 6

Ingredients

  • ½ cup nonfat plain yogurt
  • 2 tablespoons light mayonnaise
  • ½ teaspoon lemon juice
  • 3 tablespoons mango chutney (cut any large pieces into smaller chunks, if necessary)
  • 2 tablespoons golden raisins
  • ½ teaspoon minced onion
  • 2 pounds fresh asparagus, rinsed, dried and trimmed

Directions

  1. In a small bowl, combine yogurt, mayonnaise and next 4 ingredients until thoroughly blended. Cover and refrigerate until ready to serve.
  2. Cook the asparagus in boiling water until tender-crisp, about 4-5 minutes. Drain asparagus and arrange on a serving platter.
  3. Stir dressing and spoon over asparagus. Serve.
