Winter citrus season is well underway and we’re hoping many of you have already fully enjoyed the beautiful bounty and devoured countless juicy and sweet oranges, mandarins, grapefruits, and more. While you may have enjoyed the fruits as a simple and healthy snack, have you experimented with any citrus focused recipes yet? We’re here to help inspire you with everything from bright and not-too-sweet spritz, to a refreshing grapefruit, arugula, and avocado salad to citrusy sweets. The creations are endless and we’ve only just gotten started!
Orange and Mint Boozy Spritz – Makes 4 cocktails
For a truly refreshing combination that’ll awaken your senses, look no further than this bubbly orange and mint beverage. We recommend freshly squeezed juice for an unmatched crafted cocktail experience that is natural and light. Cheers!
1/4 cup freshly squeezed lemon juice
1/4 cup freshly squeezed lime juice
2 cups freshly squeezed orange juice
1/4 cup simple syrup
1 cup vodka
1 cup sparkling water
1 tablespoon turmeric (for bright color and health benefits!)
Fresh mint for garnish
Combine lemon, lime, orange juice, simple syrup, and vodka in a cocktail shaker. Add ice to each glass and pour the cocktail mixture, leaving space to stir in sparkling water. Top off with a sprig of mint and enjoy!
Orange Glazed Salmon
Quick, healthy, and seriously scrumptious, Orange Glazed Salmon is a great choice for a weeknight dinner or while entertaining guests. You can grill or bake the salmon depending on your preferred method, and make the delicious glaze with fresh orange juice, a couple tablespoons of honey and low-sodium soy sauce, and a bit of garlic and ginger for an extra kick.
Citrus and Avocado Salad
A salad that you’ll actually want to eat every day of the week is possible, especially when citrus and avocado is involved. We love the combination of tangy pink grapefruit segments, slightly spicy arugula, crunchy pine nuts, sweet pomegranate seeds, and creamy sliced avocado all tossed in a light and easy vinaigrette made with Dijon mustard, lemon juice, olive oil, and red wine vinegar. Another bonus: healthy fats from the avocado and vitamin C from the citrus!
Chocolate Dipped Mandarins
Sure you’ve had chocolate covered strawberries, but have you ever had dipped mandarins? For an incredibly juicy and sweet treat that’s not overly indulgent, this recipe is just the one.
5 Mandarin oranges
1/2 cup dark chocolate chips
Optional: sea salt or sprinkles
Line a baking sheet with parchment paper and peel mandarins. In a microwave safe bowl or double boiler, melt the chocolate chips. Dip each orange segment halfway into the melted chocolate and place on the lined baking sheet. If desired, sprinkle with sea salt or colorful sprinkled for an added layer of flavor and/or color and crunch. Refrigerate until chocolate has hardened and dig in!
Meyer Lemon and Garlic Pasta
The gourmet sweetness of Meyer lemons can brighten up pretty much any dish, but mix it into a creamy pasta and you’ll probably end up coming back for seconds. The ingredient list is fairly short so each individual bite shines in all its delicious glory. Just Meyer lemon juice, olive oil, Parmesan cheese, fresh parsley, minced garlic, and optional breadcrumbs make a unique pasta that is unlike any other.
