Avocado Matzah

INGREDIENTS

4 ripe avocados

1/2 teaspoon salt

1/2 teaspoon pepper

2 tablespoons lemon juice

8 matzah pieces

DIRECTIONS

Mash avocados with salt, pepper, and lemon juice. Spread evenly onto matzah.

Possible Toppings:

Sliced hardboiled egg or entire sunny-side-up egg

Smoked salmon

Chopped fresh cilantro

Passover hot sauce or salsa

INGREDIENTS

1 large (5–6 lb) beef brisket, trimmed

2 teaspoons onion powder

1 teaspoon garlic powder

1 teaspoon kosher salt

1 teaspoon black pepper

8 medium red potatoes, quartered

3 large carrots, peeled and sliced 2 inches long

2 stalks celery, chopped

2 large white onions, peeled and thickly sliced

1 cup ketchup

1 cup packed brown sugar

1/4 cup Passover Worcestershire sauce

1/4 cup Passover soy sauce

1/4 cup apple cider vinegar

2 cups fat-free beef broth

DIRECTIONS

Mix onion powder, garlic powder, salt, and pepper in a small bowl. Place the brisket in a roasting pan and rub spices all over the meat. Add potatoes, carrots, celery, and onions to the pan. Whisk the remaining ingredients in a bowl and pour over the top. Cover with foil and cook at 300° F for about 4 hours, until the meat is tender and potatoes are cooked through. Slice the brisket and serve on a platter with the vegetables and sauce. Garnish with fresh chopped parsley, if desired.

INGREDIENTS

3–4 lb firm apples (such as Granny Smith, Fuji, or Honeycrisp), peeled and cored

1/2 cup white sugar

4 tablespoons lemon juice

1 cinnamon stick

1/2 teaspoon salt

1 cup water

DIRECTIONS

Cut apples into 1-inch pieces. Put apple pieces and all other ingredients in a large saucepan. Bring to a boil, then lower heat and simmer for 20–30 minutes, stirring occasionally, until apples soften and become a thick sauce. Remove cinnamon stick. Serve warm or chilled.
