Yields 8 servings

INGREDIENTS

2 lb butternut squash, peeled and cubed

2 lb beef chuck, cut into 1-inch cubes

4 cups beef stock

4 tbsp olive oil

3 onions, cubed

1 cup sun-dried Tomatoes, chopped

4 garlic cloves, crushed

1 sprig Thyme (fresh)

1 sprig Rosemary (fresh)

2 bay leaves

1 tsp salt

1 tsp pepper

DIRECTIONS

Coat beef in salt and pepper, sauté in a frying pan until browned, and transfer to a slow cooker. Then, sauté onions until soft, and add to slow cooker with remainder of ingredients. Cook on low for 5-6 hours. Once fully cooked, serve with Bristol Farms’ Stone-Ground Tortilla Chips.

INGREDIENTS

2 lb boneless skinless chicken breasts, cut in bite-size pieces

1 cup basmati rice or quinoa1/2 cup chicken stock

1 can tomato paste (6 oz)

2 tsp curry powder

1 tsp garam masala

1 tsp turmeric

1 tsp salt

1/2 teaspoon freshly ground black pepper

1/2 onion, diced

3 garlic cloves, finely chopped

1 tbsp ginger, freshly grated

1/2 cup heavy cream or full-fat coconut milk

1 lime

1 1/2 tsp light brown sugar

DIRECTIONS

Cook rice and set aside. Combine and whisk chicken stock, tomato paste, salt, pepper, turmeric, curry powder, and garam masala in a bowl. Then, place remainder of ingredients in slow cooker and stir in chicken stock blend. Cook on low heat for 4 hours, then stir in heavy cream (or coconut milk), brown sugar, and freshly squeezed lime juice. Serve with rice.
