Don’t get us wrong – we’re all about the Thanksgiving feast. Luscious roasted turkey, aromatic stuffing, creamy mashed potatoes, rich gravy, buttery rolls, tart cranberry sauce, and casseroles galore…how could you not love Turkey Day Dinner? But, we also appreciate the amazing leftover opportunities that come with Thanksgiving. From turkey, stuffing, and cranberry sandwiches to sheet pan turkey pot pies to classic and oh-so heavenly casseroles like turkey tetrazzini, we could eat turkey for days…which is why a bigger bird just for leftovers sake should be a rule.

INGREDIENTS

3 cups turkey, chopped or shredded

1 cup cranberry sauce

3 cups mashed potatoes

2 cups green beans

2 cups turkey gravy

3 cups stuffing

2 tablespoons chicken broth

2 sprigs, rosemary (optional; for garnish)

DIRECTIONS

Preheat oven to 400 degrees.

Spread turkey and cranberry sauce across the bottom of a greased glass baking dish, then cover with a layer of mashed potatoes. Add green beans over potato layer, then evenly pour gravy on top. Then, form an even and flat layer of stuffing and sprinkle with chicken broth, to maintain moisture.

Cover casserole with tin foil and bake at 400 degrees for roughly 35 minutes, or until heated through.

INGREDIENTS

2 tablespoons olive oil

2 lb cooked turkey, roughly chopped into cubes

2 tablespoons butter

1 large onion, chopped

1 large carrot, chopped into 1-inch thick discs

1 stalk celery, chopped

2 cups white button mushrooms, sliced

4 shallot cloves, minced

3 tablespoons all-purpose flour

2 cups heavy cream

1 cup wild rice

5 cups low sodium chicken broth

1 bay leaf

1 tablespoon fresh thyme, chopped

1 teaspoon dried marjoram

1 tablespoon fresh rosemary, chopped

2 tablespoons fresh parsley fresh, chopped (optional)

salt and pepper, to taste

DIRECTIONS

Melt butter over medium heat in a 6 Quart Dutch Oven. Add onions, mushrooms, carrots, celery, and shallots and stir until soft. Then, mix in flour and slowly stir in heavy cream, wild rice, and chicken broth. Once combined, add bay leaf for aromatic effect.

Switch to high heat until the soup reaches a boil. Then, reduce heat to medium-low and cover. Cook for 30 minutes, or until the rice is fully cooked.

Remove the bay leaf and stir the herbs into the pot. Add salt and pepper to taste and garnish with parsley, if desired. Serve and enjoy.

What’s better than Chicken Pot Pie, you ask? Well, how about Turkey Pot Pie, made in a cinch!

INGREDIENTS

2 tablespoons unsalted butter

1 large carrot, chopped

1 celery stalk, chopped

1 cup large onion, chopped

2 cloves garlic, minced

1 teaspoon Herbes de Provence seasoning

1 pinch kosher salt

1 teaspoon freshly ground black pepper

1 cup low-sodium chicken broth

3 tablespoons flour

1 cup heavy whipping cream

3 cups cooked turkey, shredded

1 cup green beans

1 tablespoon fresh parsley, chopped

1 package puff pastry sheets, room temperature

DIRECTIONS

Heat oven to 400°. Spray a small rimmed baking sheet with cooking spray.

Then melt butter over medium-high heat in a large saucepan. Add carrot, celery, onion, garlic, salt, and pepper, and cook until vegetables are slightly softened, or for approximately 4 minutes. Add broth and flour and mix until well combined. Add cream and stir until thickened, for roughly 5 minutes.

Then, add cream and lightly stir, until slightly thickened. Stir in turkey, green beans, and fresh parsley and pour contents into the pan.

Lay out sheets of pastry dough on a cutting board and stretch them with a rolling pin. Cut the dough into one-inch strips and place them atop the pan in a lattice pattern.

Bake until golden brown, for roughly 30 minutes.

Turkey Tetrazzini is as delicious as it is alliterative! Here’s how you can make one of our favorite post-Thanksgiving dishes:

INGREDIENTS

8 ounces egg noodles, cooked

2 tablespoons butter

8 ounces sliced mushrooms

1/2 teaspoon salt

1/8 teaspoon pepper

2 cups cooked turkey, chopped

4 ounces cream cheese

1/4 cup sour cream

1/2 cup Parmesan or Romano cheese, grated

DIRECTIONS

Preheat oven to 375 degrees. Cook egg noodles in lightly salted water, until al dente.

Melt butter in a large heavy skillet and saute mushrooms with salt and pepper. Stir in turkey, cream cheese, and sour cream.

Place cooked noodles in a glass baking dish and pour sauce mixture evenly over the top. Sprinkle with Parmesan or Romano cheese. Bake until sauce begins to bubble, or approximately 20 minutes.
