Belinda’s ‘Famous’ Flourless Peanut Butter Chocolate Chip Cookies

Yields 1 dozen cookies
INGREDIENTS
- 1 cup pre-stirred and refrigerated, natural peanut butter
- 1/2 cup white sugar
- 1/2 cup light brown sugar
- 1 tsp vanilla extract
- I large egg, beaten
- 1/2 cup mini chocolate chips
- Coarse sea salt
DIRECTIONS
- 1. In a bowl, mix together peanut butter, sugars, vanilla, and egg.
- 2. Stir in chocolate chips.
- 3. Roll with hands into 1 inch balls.
- 4. Flatten onto baking sheet with fork to make criss cross pattern.
- 5. Sprinkle salt on top.
- 6. Bake at 350 degrees for 10-15 minutes.
- 7. Cool, then eat!

Baked these cookies tonight but had to double the recipe (12 cookies, seriously?! I am NOT doing all that work for just 12 cookies!).
So. They’re done. And, oh, are they delicious! Really glad I doubled that recipe. Now I’ll have enough for tomorrow, too!
