Laura’s Stained Glass Frittata

Yields 8 servings
INGREDIENTS
- 8 eggs
- 2 cups potatoes, diced & cooked
- 1 onion, diced
- Salt & pepper
DIRECTIONS
- 1. Preheat oven to 350 degrees.
- 1. Sauté onion in butter in a cast iron or oven safe pan.
- 2. Add potatoes, salt & pepper. Combine 8 eggs & pour over mixture in pan, adding more salt & pepper.
- 3. Cook just a bit on the top of the stove & then stick it the oven.
- 4. Keep an eye on it & when it firms up in the middle, 5-10 mins, pop it under the broiler for a sec, to golden-ize the top.
- Customized additions make it special! Easy add-on yummies (optional) include cut up mushrooms, feta cheese, a little buttermilk, pre-cooked garlic cloves, a family favorite– crumbled linguiça & just about any thing you can throw in! I sprinkle freshly shredded Parmesan all over on the top, right before broiling.
- The customized additions help make up the different colors in the “stained glass” texture of the sliced frittata!
