INGREDIENTS

  • 8 eggs
  • 2 cups potatoes, diced & cooked
  • 1 onion, diced
  • Salt & pepper

DIRECTIONS

  • 1. Preheat oven to 350 degrees.
  • 1. Sauté onion in butter in a cast iron or oven safe pan.
  • 2. Add potatoes, salt & pepper. Combine 8 eggs & pour over mixture in pan, adding more salt & pepper.
  • 3. Cook just a bit on the top of the stove & then stick it the oven.
  • 4. Keep an eye on it & when it firms up in the middle, 5-10 mins, pop it under the broiler for a sec, to golden-ize the top.
  • Customized additions make it special! Easy add-on yummies (optional) include cut up mushrooms, feta cheese, a little buttermilk, pre-cooked garlic cloves, a family favorite– crumbled linguiça & just about any thing you can throw in! I sprinkle freshly shredded Parmesan all over on the top, right before broiling.
  • The customized additions help make up the different colors in the “stained glass” texture of the sliced frittata!
