INGREDIENTS

  • 1 whole chicken
  • 1 inch piece of ginger
  • 4 tbsp ginger, minced
  • 4 cloves + 2 tbsp garlic, minced
  • 2 cups rice
  • 3 cups chicken stock
  • 1/3 cup water
  • 1/2 tbsp brown sugar
  • 1/3 cup dark soy sauce
  • sriracha
  • 2 tbsp red chili sauce
  • 1 tbsp fish sauce
  • salt, to taste

DIRECTIONS

  • Chicken – boil whole chicken and 1 inch piece of ginger for 10 mins under low heat; let it simmer for 15 mins.
  • Rice – fry 2 tbsp garlic and uncooked rice in pan and stir for 2 minutes; transfer to rice cooker and add chicken stock and dash of salt.
  • 3 sauces
    • 1. Ginger garlic sauce – sauté 2 tbsp finely minced ginger, garlic and salt under low heat for 3 mins.
    • 2. Sweet soy sauce – reduce water, brown sugar, dark soy sauce until thick.
    • 3. Chili sauce – mix sriracha, red chili and fish sauce.
