True American whiskey falls into three categories: Bourbon, Tennessee, and Rye.

For bourbon whiskey to be, well, bourbon whiskey, it has to follow some hard and fast rules. It must be: produced in the United States, made from at least 51% corn, aged in new charred oak containers, distilled to no more than 160 proof, poured into the container at no more than 125 proof, and bottled at 80 proof or higher.

Tennessee whiskey, like the iconic Jack Daniel’s, is made with the same regulations as bourbon whiskey, but with one key difference. Before barreling, Tennessee whiskey is put through a sugar maple filtration system to give it a slightly sweeter flavor.

Rye whiskey follows nearly all the same rules as bourbon, but must be made with at least 51% rye.
