Just because we live in SoCal, it doesn’t mean our wardrobes and cravings don’t change with the seasons. The arrival of hard squashes like pumpkin, butternut, and delicata definitely have us thinking about warm and hearty autumn dishes.

Their subtle, sweet flavors combined with smooth, but filling textures make whipping up comfort foods a breeze. Plus, bonus points for their bright orange and yellow tones that will brighten any cold-weather dish!

Squash are nutrient dense, low in calories and fat, and rich in vitamins A, C, and E, and magnesium and potassium. They can take on a wide variety of seasonings; and are great as carb or meat replacements in soups, stews, and casseroles. The natural sweetness of squash can bring a healthy spin to desserts, beyond pumpkin pie.
