Sweet Nothings

These pretzels will make the living room go wild on Sunday, even if you’re just watching for the commercials. Pillow-soft and buttery, they’re the classic game day snack. Plus, fresh baked pretzels are super versatile.

Pretzels are delicious all on their own, but team them up with loaded cheese dip, spicy mustard, or Green Goddess dressing for a championship-level nosh. Then, for a sweet twist, you can make the second half of your batch with cinnamon sugar and candied almonds.

Ready to kick things off? Let’s get started with this simple recipe.

Soft Pretzels
Ingredients
2 cups all-purpose flour
1 tsp salt
1 tsp sugar
1/2 cup slightly warm water
2 1/2 tsp active dry yeast
2 tbsp room temperature butter

For Baking Soda Bath
4 1/4 cups water
3 tbsp baking soda

1. In a bowl, add sugar and yeast to 1/2 cup slightly warmed water (100-115°F). Stir and allow to bloom for 10 minutes.
2. In a separate bowl, sift all-purpose flour and sugar together.
3. Cut butter into small cubes and set aside.
4. Add bloomed yeast and cubed butter to the flour bowl. Knead well for 15 minutes, until the dough is supple. Add extra flour or water as needed to form a smooth dough.
5. Cover and let rest for 30 minutes.
6. As it rises, preheat the oven to 400°F and bring 4 1/4 cups of water to a boil in a large pot. Add baking soda. Expect a small reaction as the baking soda is added.
7. Cut the dough into 6 equal parts and roll into strands with tapered edges. Lifting the ends, twist the strands twice to form a pretzel shape.
8. Using a strainer or slotted spoon, gently lower each pretzel into the water solution. Allow to float for 6 seconds before flipping. Remove after another 6 seconds and place on a lined baking sheet.
9. Sprinkle with coarse salt and place into the oven. Bake for 15-20 minutes or until golden brown.

Green Goddess Goodness

Looking for a healthier plant-based option? This Green Goddess Dip is the perfect pretzel sidekick.

Green Goddess Dip
Ingredients:
1 tbsp white miso
2 cloves garlic
2 green onions, chopped
1/2 cup extra virgin olive oil
1 avocado, peeled and pitted
1/2 cup fresh mint
1/2 cup fresh dill
1/2 cup fresh parsley
1/2 cup fresh basil
Juice of two lemons
Kosher salt to taste
Black pepper to taste

Directions:
1. In a food processor or blender, add avocado, mint, dill, parsley, basil, green onions, garlic, and miso. Blend until roughly chopped.
2. Slowly stream in olive oil. Once incorporated, add lemon juice. Season to taste.
3. Enjoy!

Cinnamon Sugar Pretzels

You can’t beat cinnamon sugar pretzels…unless you add candied almonds to the mix!

Cinnamon Sugar
1/2 cup sugar
3 tbsp cinnamon
3 tbsp melted butter

Candied Almonds
Ingredients
2 cups chopped almonds
1/2 cup water
1 cup sugar
1/2 tbsp cinnamon
1/2 tbsp cardamom

Directions
1. In a bowl, combine sugar and cinnamon. Whisk together.
2. In a pot over medium heat, add 1 cup sugar, 1/2 cup water, 1/2 tablespoon cinnamon, and 1/2 tablespoon cardamom. Bring to a boil.
3. Once boiling, add chopped almonds. Stir until fully coated.
4. Pour onto a baking sheet and allow to cool before touching.
5. Melt the butter on the stovetop or in the microwave.
6. Using a brush, coat the pretzel in melted butter. Then, sprinkle on the cinnamon sugar and candied nuts.
