Pancakes with Strawberries

Treat your taste buds to the complementary flavors of fresh strawberries and rich pancakes.
|Fresh strawberries, sliced|
|1 packet Instant vanilla pudding|
|1 1/2 cups flour|
|3 1/2 teaspoons baking powder|
|1 tablespoon sugar, sifted|
|3/4 teaspoon salt|
|1 teaspoon vanilla|
|1 1/4 cups milk|
|3 tablespoons butter, melted|
|Butter, for cooked pancakes|
|Whipped cream, for garnish|
- In a bowl, gently stir together sliced strawberries and some of the instant vanilla pudding powder. Note: Use pudding powder according to taste. Set strawberries aside.
- In a large bowl, stir together flour, baking powder, sugar, and salt. Add egg, vanilla, milk, and melted butter; stir together until smooth.
- Drop 1/4 cup pancake batter onto a lightly oiled griddle that is set over medium high heat; cook pancakes until browned on both sides.
- To assemble, butter each pancake, and as you are assembling the stack place some of the sliced strawberries between the layers. Serve with a dollop of whipped cream on top.
