Hello Summer

BF 101: Tomahawk

Tomahawk Steaks with sides and drinks on a table by the pool

Turn heads with our tender and juicy tomahawk steaks! Not for the faint of heart, this elevated cut of meat is just as stunning as it is delicious. A tomahawk steak is a bone-in ribeye that is carefully trimmed along the naturally curved bone. Given their size, there’s no denying that whipping up these massive and meaty steaks can feel a bit overwhelming. We’ve got you covered with some of our best tips and tricks on how to take on the tomahawk!

How to Prep

Thanks to the tomahawk’s large bone, they’re typically juicer and maintain more flavor when marinated. There are a few ways to further enhance your eating experience:

  • Dry Brine (our favorite method)
  • Marinate While dry brining is generally recommended for tomahawks to highlight their natural flavor and achieve a great sear, a marinade can be used if you're looking to infuse specific flavors and tenderize a bit further. However, be mindful of the liquid content. From our signature Bristol Farms marinades to a homemade recipe made with equal parts balsamic vinegar and soy sauce, marinating your tomahawk can take the taste to the next level. Due to the tomahawk's thickness, prolonged marinating can sometimes lead to a "cured" or mushy texture, especially with highly acidic marinades. Aim for 2-4 hours, or overnight at most.
  • Simple Seasoning The beauty of a high-quality tomahawk is its inherent flavor. Often, less is more when it comes to seasoning, allowing the beef to shine.

How to Cook

Next, it’s time to turn up the heat! Grilling is our favorite way to prepare a tasty tomahawk, and using a reverse sear method cooks your tomahawks to perfection every time. This slow and controlled cooking method may seem tedious, but it ensures you won’t overcook your meat. Once all is said and done, expect a juicy and tender tomahawk that everyone will love. Check out our Grilled Reverse Seared Tomahawk Steak recipe for some step by step instructions!

Perfect Pairings

For a complete experience, a dry and heavy-bodied red like Cabernet Sauvignon pairs well with your tomahawk. Introduce textural variety with grilled asparagus, and complete the plate with creamy mashed potatoes, a timeless steak accompaniment.
