
Let’s celebrate this Cinco de Mayo with a Cucumber Jalapenño Margarita Mocktail. It’s sweet and citrusy with a spicy kick, and is completely alcohol free!

Ingredients
2 cucumbers, peeled & diced, reserve a few slices for garnish
1 jalapeño, seeded & diced, reserve a few slices for garnish
8 ounces lime juice
1/2 cup agave
24 ounce carbonated mineral water
Ice
2 tablespoons Tajin
Directions

Add the cucumbers and jalapeños to a blender and puree until completely smooth. Pour the mixture through a fine mesh strainer over a bowl to separate the pulp and reserve the juice.

Add the cucumber juice to a large pitcher, then add the lime juice, agave, and carbonated water. Mix until well combined.

Add desired amount of ice to the pitcher and stir.

Pour the Tajin onto a small flat dish. Rub one of the cucumber slices along the rim of a cocktail glass on one side, rub the glass in the tajin, then fill with the mocktail mixture.

Place a couple of the cucumber and jalapeño slices in the drink.
