Cucumber Jalapeño Margarita Mocktail
Let’s celebrate this Cinco de Mayo with a Cucumber Jalapenño Margarita Mocktail. It’s sweet and citrusy with a spicy kick, and is completely alcohol free!

Ingredients

  • 2 cucumbers, peeled & diced, reserve a few slices for garnish

  • 1 jalapeño, seeded & diced, reserve a few slices for garnish

  • 8 ounces lime juice

  • 1/2 cup agave

  • 24 ounce carbonated mineral water

  • Ice

  • 2 tablespoons Tajin

Directions

  1. Add the cucumbers and jalapeños to a blender and puree until completely smooth. Pour the mixture through a fine mesh strainer over a bowl to separate the pulp and reserve the juice.
  2. Add the cucumber juice to a large pitcher, then add the lime juice, agave, and carbonated water. Mix until well combined.
  3. Add desired amount of ice to the pitcher and stir.
  4. Pour the Tajin onto a small flat dish. Rub one of the cucumber slices along the rim of a cocktail glass on one side, rub the glass in the tajin, then fill with the mocktail mixture.
  5. Place a couple of the cucumber and jalapeño slices in the drink.
