Hasselback Potatoes
Elevate the traditional baked potato to this iconic Swedish recipe. Hasselback potatoes are effortlessly elegant, featuring fan-like slices with crisp, buttery edges and a soft, velvety center. 

Ingredients

  • 4 medium to large russet potatoes

  • 4 tablespoons unsalted butter, melted

  • 1 teaspoon kosher salt

  • 1/2 teaspoon black pepper

  • 2 cloves garlic, minced

  • 1 tablespoon fresh rosemary or thyme

Directions

  1. Preheat your oven to 425°F.
  2. Wash the potatoes thoroughly.
  3. To slice without cutting all the way through, place a potato between two chopsticks or wooden spoons. Slice the potato crosswise into thin cuts (about ⅛ inch thick) until your knife hits the chopsticks, stopping the slice.
  4. In a small bowl, mix the melted butter (or olive oil), minced garlic (if using), salt, pepper, and chopped herbs.
  5. Place the sliced potatoes cut-side up on a baking sheet. 
  6. Brush them generously with half of the seasoned butter mixture, making sure the fat gets slightly down into the cuts. Bake for 30 minutes.
  7. Remove the potatoes from the oven. 
  8. Brush them generously with the remaining seasoned butter mixture. Return them to the oven and bake for another 30 to 40 minutes, or until the potatoes are tender inside and the edges are crispy and golden brown.
  9. Transfer the finished potatoes to a plate. Garnish with a sprinkle of extra salt or fresh herbs before serving immediately.
