Baked Cranberry Oatmeal
Not in the mood for a boring bowl of overnight oats? Enjoy holiday spice in every bite of this Baked Cranberry Oatmeal.

Ingredients

  • 2 cups old-fashioned oats

  • 1/2 cup dried cranberries

  • 1 teaspoon cinnamon, ground

  • 1/2 teaspoon baking powder

  • 1/4 teaspoon salt

  • 2 milk (dairy or plant-based)

  • 1/4 cup maple syrup or honey

  • 1 large egg

  • 2 tablespoons melted butter or oil

  • 1 teaspoon vanilla extract

Optional Ingredients

  • 1/4 cup walnuts or almonds, chopped

Directions

  1. Preheat your oven to 375°F and grease a baking dish with butter or cooking spray.
  2. In a large bowl, combine the oats, dried cranberries, nuts (if using any), cinnamon, baking powder, and salt. Mix well.
  3. In a separate bowl, whisk together the milk, maple syrup (or honey), egg, melted butter (or oil), and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until everything is thoroughly combined.
  5. Transfer the mixture to the greased baking dish and spread it out evenly.
  6. Bake in the preheated oven for about 30 to 35 minutes, or until the top turns golden brown and the oatmeal is set.
  7. Once baked, remove the oatmeal from the oven and let it cool for a few minutes before serving.
  8. You can also add a drizzle of maple syrup or a splash of milk for extra sweetness if desired.
