Say “ho ho ho” with these sweet and chocolatey Hot Cocoa Pancakes! Even Santa himself can’t turn down a stack.
Ingredients
1 cup all-purpose flour
2 tablespoons unsweetened cocoa powder
2 tablespoons granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk (dairy or plant-based)
1 large egg
2 tablespoons melted butter or vegetable oil
1 teaspoon vanilla extract
Optional Ingredients
Mini marshmallows, chocolate chips, or whipped cream for toppings

In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, and salt until well combined.

In a separate bowl, whisk together the milk, egg, melted butter or oil, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and gently stir until they are just combined. Be careful not to overmix, as it may make the pancakes tough.

Heat a non-stick skillet or griddle over medium heat. Grease the skillet lightly with butter or cooking spray.

Using a ladle or measuring cup, pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, which usually takes about 2 to 3 minutes.

Flip the pancake and cook for another 1 to 2 minutes. Repeat with the remaining batter.
