Ingredients
1 cup dragon fruit (fresh); or 1 packet frozen (unsweetened)
3 cups pineapple juice
1 cup raw cashews
3/4 cup chia seeds
Toppings
Granola
Strawberry
Blueberry
Mango
Goji Berry
Shredded Coconut

Directions

Add pitaya, raw cashew and pineapple juice to high speed blender. If you don’t have a high speed blender, soak cashews in hot water for 10-15 minutes to soften, strain, then blend.

Pour pitaya mix into bowl and whisk in chia seeds. Let set for 30 minutes.

To Assemble: Layer pitaya chia pudding with your favorite toppings and enjoy!
