
Let’s make Roasted Cherry Crostinis! This recipe features our seasonal California-grown red cherries and makes a festive appetizer for Memorial Day BBQs.
Ingredients
1 pound fresh cherries, pitted and halved
1 jalapeno, seeded and diced
1 teaspoon lemon zest
1 tablespoon avocado oil
1 tablespoon agave
1/4 tablespoon salt
1/8 teaspoon pepper
2 tablespoons fresh cilantro, chopped
1 scallion, thinly sliced
Directions

Preheat the oven to 375 degrees and line two baking sheets with parchment paper.

Place baguette slices on one baking sheet and set aside.

In a medium bowl, gently mix the cherries, jalapeno, lemon zest, avocado oil, agave, salt, and pepper. Dump the cherry mixture on the second baking sheet and then place it in the oven. Roast for 15-20 minutes until cherries have softened and liquid has thickened. Remove from the oven and set aside.

Place the sliced baguettes in the oven for 6-7 minutes until slightly golden and crispy. Remove from the oven and rest for 5 minutes.

Spread a little cream cheese on each baguette slice then top with a spoonful of the cherry mixture.

Top each crostini with a pinch of cilantro and scallions. Serve immediately.
