
Bringing bold Mediterranean vibes with creamy mint feta yogurt sauce & crunchy fennel, red cabbage and apple slaw.
Ingredients
BF brioche buns
Butter, optional
4 USDA prime Ground Beef Patties
Yogurt Sauce
1 garlic clove, roughly chopped
1/2 cup plain Greek yogurt
1/4 cup feta, crumbled
2 tablespoons fresh mint
Squeeze of lemon juice
Zest of lemon
Slaw
1 1/2 cups shaved fennel (about 1 small bulb)
1 1/2 cups shredded red cabbage (about ¼ of a head)
1 julienned or thinly sliced
4 chopped parsley
Slaw Vinaigrette
3 tablespoons extra virgin olive oil
1 1/2 tablespoons fresh lemon juice
1 1/2 teaspoons honey (depending on how sweet your apple is)
Salt and pepper, to taste

In a food processor or with an immersion blender, mix Greek yogurt, crumbled feta, garlic, mint, lemon juice, and lemon zest. Pulse until well blended. Store in the fridge until ready to assemble burgers.

In a bowl, combine fennel, red cabbage, apple, and parsley. In a separate small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper. Toss the slaw ingredients with the vinaigrette and put in the fridge until ready to assemble burgers.

Cook the burger patties according to your preference (grill or pan-fry).

Brush brioche buns with butter for extra flavor, then toast in pan used for burgers.

Spread the yogurt sauce on the buns, add the cooked burger patty, and top with the slaw. Serve immediately!
