Step up your summer sandwich with grilled peaches! This simple recipe is the ideal combo of savory and sweet and can be made in under 15 minutes.
4 bread slices of your choice
1 large peach, sliced
4 ounces cream cheese, softened
2 teaspoons fresh thyme leaves
1/4 cup pecans, chopped
Salt and pepper to taste
Preheat a grill or grill pan to medium-high heat.
Brush the sliced peaches with a bit of olive oil and place them on the grill for 1-2 minutes per side or until they have grill marks.
In a small bowl, mix together the cream cheese, thyme, chopped pecans, salt, and pepper.
Toast the bread slices and then spread the cream cheese mixture on each slice.
Top two slices of the bread with the grilled peach slices before placing the other two slices of bread on top, cream cheese side down.
Cut the sandwiches in half and serve immediately.
