2 pounds salmon fillets
3/4 cup Gold Nugget Tangerines (cut into cubes)
1 medium tomato diced
3 tablespoons cilantro finely chopped
3 tablespoons red onion finely chopped
3 cloves garlic minced
2 tablespoons tangerine zest
3 tablespoons extra virgin olive oil
2 teaspoons salt, more
2 teaspoons pepper, more
1 tablespoon jalapeño finely chopped
Preheat broiler to 450-500°F.
In a small bowl, combine tangerine zest, minced garlic, salt, pepper, and olive oil.
Place salmon on a lined baking sheet. Using a brush, apply the oil mixture to the fish. Place into the broiler for 10-15 minutes, or until opaque.
While the salmon broils, combine Gold Nugget tangerine cubes, tomato, red onion, jalapeño, and cilantro in a bowl to create your tangerine salsa. Season with salt and pepper to taste.
Remove fillets from broiler, top them with tangerine salsa, and serve.
